Unfortunately, no. Seitan, by nature is gluten. There are no gluten-free options in this course, so if you are gluten-free or celiac this is not the course for you.

Yes! All of the recipes are either naturally oil-free or can be made oil-free with a few tweaks. I included instructions for this in every recipe.
